The club announced after Sunday's defeat at Asefa Estudiantes – its seventh in eight games - that Quintana had been relieved of his duties.
The president of the club, Miguel Cano, said in a statement: "It's a hard and difficult decision but we believe that it is best for the team.
"We are grateful for his work these last three years in Alicante, but there has been a problem of confidence has brought about this situation..
"We need a change of direction."
Quintana is the second coach to lose his job in the ACB with Miguel Hussein of Power Electronics Valencia sacked the week before.
Svetislav Pesic replaced Hussein and guided the club to their second victory of the ACB season on Sunday at home to CAI Zaragoza.
